I suppose the Burlington GO station would be an okay place to catch some action. The station itself is just east of the point where the freight mainline diverges and does not provide a great view of the freight trains. You might want to consider taking a connecting GO bus from Burlington to the next station west, Aldershot. CN has a small yard there and does some switching from time to time. Currently Aldershot only sees GO trains during rush hour but there are plans to extend all-day weekday GO trains there once the additional tracks, presently under construction, are completed.
Trains passing the Burlington GO station include the GO trains, a few CN locals, and some VIA (and one Amtrak) passenger trains.
Another possible location to take GO to would be east to Pickering, Ajax, Whitby, or Oshawa. Here the CN main parallels the GO tracks and there are more CN and VIA trains than at Burlington or Aldershot.
