An article written in USA Today gives some insight into "midnight voting" for NH.
Hart's Location was the first town to begin the tradition of early voting in 1948. According to the town's website, it started when the town was "inhabited mostly by Maine Central Railroad workers and their families" and early voting became the most convenient way for them to vote.

I believe the railroad, was the largest employer in that area at one time.

Keep in mind, the population of Hart's Location was 17 people in 1940, 11 people in 1950, 7 people in 1960, etc. You'd only need one or two "railroad families" living in town in order for the decision to change voting hours to make sense.
