I have a couple of speeding tickets (2 to be exact). If I get the points removed or reduced, do I still have to disclose them? Would they still show on a license check?

yes any conviction and paying a ticket is guilty plea, so they are in state and national driver registry.

That's not a big concern unless one has to have a CDL. Applying for transportation jobs railroads look for major violations DUI, license suspensions etc....especially DUI if one wants to become a Locomotive Engineer.
