I picked up an old set of Con-Cor NYC passenger cars from the 1970's in HO Scale. There is a moulded drum head blank on the end of the observation car. What sort of drum head logo could I use with the silver, fluted side, stream line passenger cars? Not sure if NYC had a round style drumhead or not.

I don't think the Central had any round drumheads.

You will likely have to sand or drill that bogus drumhead out, and The Central was gone before 1970. The obs you have is a post war car, and I don't think it comes close to anything Central had. Go for the Walther's NYC Tavern Lounge if you want the real thing.

The "MICHIGAN TIMBERLINER" which operated over Michigan Central RR track from Detroit to Mackinaw City used a round drumhead.
