Ayup.. you're foamers.

I can guarantee if you showed that photo to a focus group, no one is going to notice any cars other than the Viewliner.
And honestly, I think the photo showing a fairly idyllic route is perfect for the image they're trying to portray.

We're really a very small segment of their market.

Interesting that the photos of the various sleeping accommodations on Viewliners are all the same:

All of those links mention "Meals Included", and the one for Accessible Bedroom https://www.amtrak.com/onboard/onboard-accommodations-for-all-your-needs/sleeping-accommodations/viewliner-accessible-bedroom.html also lists a Video Display, although it doesn't claim that it shows anything.

Wouldn't a new passenger want to see what the specific room actually looks like?

The problem is, it's nearly impossible to get a good view of the room.

If you photograph it w/o some sort of fisheye lens it can look intensely claustrophobic.
And if you do with a fisheye lens, people will complain you deceived them.
